Super easy and fun recipe today. These are so quick and easy to make they are a go to snack in summer. Bonus is that the kids can also get involved as these are no bake! These are also healthy, super healthy if you add flax seed – not so healthy if you add chocolate chips or coat them in melted chocolate. For the record I have done both and they both taste amazing.
If you wish to add chocolate chips to the mixture 1/2 a cup gives you a good ratio to chocolate and oats.
To make you will need:
1 cup dry oats/oatmeal
1/2 cup peanut butter
1/3 cup honey
1 teaspoon vanilla extract
Mix everything together in a large mixing bowl and let stand in the fridge for at least half and hour. This helps with the peanut butter and honey setting, If not it’s just really messy and hard to roll. Like oats under your finger nails messy!
Once it’s set take it out of the fridge and roll into small 1 inch balls. Store in an air tight container or serve on a plate and eat straight away. Simple I know, easy I know, healthy I KNOW! I was surprised too. If you are doing clean eating try and find the natural/organic peanut butter, as the Kraft can have a bit too much sugar. In saving that I ate 4 of these little bites within 5 minutes lol I feel a walk after dinner need coming on.
