As you would have seen on Instagram the other day I made a great green smoothie. I must admit, it is not my recipe. This is because I am not very creative with food. Crafts, DIY and just about everything else not a worry at all! Let the creativity flow…food not so much.
I love food and tasty food at best. I will try anything at least once and after my last pregnancy there was a slow (very slow) movement to get healthy and lose some weight. This was mainly so that I could be there for my family and keep up with the kids. Nothing really stuck and I found that no matter how hard I worked (or didn’t work out) I would always get to a certain point and not go anyway, or I would go back up in size. Crazy I know right!
This all changed when my husband decided he wanted to try juicing. We have cut sugar/most of it (give me all the sugar!!!) and now eat fairly good. Think 80/20 Paleo style. I love it and it’s really easy to follow. There are also some really good websites and cooking books out there on Paleo. This brings me to the green smoothie recipe.
Can you say Pina Colda (virgin style)? When we first started juicing/smoothies I was really afraid of the taste. Don’t look at me like that! They all called for Kale and spinach and and, well stuff we didn’t eat day-to-day. It was crazy to think kale and oranges could taste nice together. The other good thing was that the ones that were just food and ice mixed together I could give to my kids and not panic.
So without further a-do the 3-ingredient Pina colda smoothie from Cook Eat Paleo
- 1 cup fresh baby spinach
- ¾ cup coconut milk
- 1 cup frozen pineapple
Put in blender, I have the nutria-nija and blend. It really is that simple and it tastes amazing! This would be a great smoothie for summer and I can see myself sitting out the back and enjoying on a summer weekend.
